8 of the Premiership teams are averaging a goal a game, or less.

Not sure if this is normal but seems pretty low.

Good strikers are a rare commodity.   It's not for the lack of  trying to find one or two.

Probably no definitive answer although after watching Hibs last week (For the whole match, including extra time for Pricky) piss poor strikers was the reason in that game.

IMO.  Defenders are better,  defences are better organised,  defending starts further up the pitch and professional fouls are used more often to stop forward runs,  especially in the area just over half way against the attacking side.  Hibs,  Hamilton and Livvy are good at this.  Aberdeen, in their Ferguson heydays, were the experts in this.  Highlights don't catch the run of play throughout a match.

All successful teams have a strategy for"winning ugly " whether we like it or not.  It's up to  the officials to act to penalise the offenders.  Aberdeen under Fergie were the most obvious . Motherwell too in the infamous cup game at Motherwell took it in turns to kick our star players off the park.  But also.. Credit to managers and players OFallon sides for being better organised, fitter and faster in defensive positions.
